The starter
Cassolette of scallops and mushrooms & AOC Patrimonio white 2016 | 23,40 €
This Patrimonio is made from a selection of our finest vines, located on the unique terroir of E Croce in Corsica. This 100% Vermentino has a beautiful pale yellow colour with aromas of white flowers, hawthorn and honey. The palate is long with notes of lime blossom and lemon blossom that underline the sweetness of this starter.
The main courses
Stuffed capon & IGP Île de Beauté « O Bà » | 31,80
The traditional Christmas capon will find its perfect companion in our tribute wine: O Bà! Here, each of the 3 autochthonous grape varieties plays a precise role to deliver a perfectly balanced wine. The nielluciu gives structure, the minustellu brings roundness and the grenache, fruit. On the palate, beautiful, finely spiced notes sublimate the fatness of the capon.
Lobster American style & IGP île de Beauté « L’Altru Biancu » 2015 | 21 €
The greediness of this recipe gives way to a precise and balanced white wine: "L'Altru Biancu". This cuvée, which is the perfect presentation of the autochthonous grape variety, biancu gentile, will sublimate the flesh of the lobster. The colour is luminous, brilliant, of a beautiful light yellow. On the nose, it exhales floral and honeyed scents. On tasting, the attack is subtle and harmonious, the length is balanced.
Oven-baked venison leg & AOC Patrimonio red 2014 | 22 €
This blend of Nielluciu (90%) and Grenache (10%) is a reference in the Patrimonio AOC. Intense ruby red in colour, it presents aromas of red fruits sublimated by a slight note of liquorice. This heritage has a greedy, structured and spicy mouthfeel and will be the perfect alter ego of a venison haunch to be enjoyed with the family.
